Sugar and Spice, Make-Your-Own Nice

Last week, Spring was here. I planted pansies and geraniums. I held a birthday party outside. This week, it's Winter once more. While fresh basil and tomatoes dotted the menu last week, soups and comfort food seem to be in order now. Taking advantage of chilly weather oven cooking, I served up sweet potatoes tonight with some homemade chicken pot pie. (Am I really Chinese?!)  Sweet potatoes are not "preferred" by my children, but somehow, that makes me all the more provoked to convince them otherwise. I know, I know--as if I don't have enough battles apart from tuber-training. If sweet potatoes require some coaxing at your dinner table, give this a try:

Make-Your-Own Baked Sweet Potato Bar

  • Baked sweet potatoes
  • butter
  • 1 bowl of brown sugar
  • 1 bowl of granola (I used Trader Joe's Praline granola)
  • 1 bowl of miniature marshmallows
  • 1 bowl of chopped toasted or candied pecans
  • Cinnamon

The kids were not only pleased with their creations, but were pleasantly surprised by their taste buds.
