Easy Asian Cucumber Salad

A recipe that is simple and yet so refreshing is the perfect accompaniment to any summer meal. Serve this salad beside a barbecue feast or with an array of charcuterie for a fresh midday snack.

INGREDIENTS:

3 cups of Persian Cucumbers, diced

6 TBS of soy sauce

1 clove of garlic

6 TBS of rice vinegar

2 tsp. of sugar 

1 tsp. of sesame oil

 

INSTRUCTIONS:

Dice your cucumbers. "Bruise" them to release flavor. Add the soy sauce, one clove of garlic, rice vinegar, sugar, and sesame oil to the cucumbers. Toss together. Let the mixture marinate for 30 minutes before serving.
