Sometimes you get drawn in by a Martha Stewart recipe, it's delectable photos, and its persuasive flavors...but never try it because you either can't pronounce an ingredient or simply don't have time to go through the many steps prescribed. It happens to me all the time.
So, today...I'm simplifying and remixing one of her recipes!
Martha recently cast her culinary spell on me once again with a Green Salad with Roasted Corn, Cheese, Basil, and Grilled--Tomato Vinaigrette:
I don't usually have fresh ears of corn on hand, but I always have frozen corn. I never purchase boston lettuce, but regularly keep heads of romaine in the crisper. I've never purchased a block of caciovallo cheese, but I usually have a bag of shredded parmesan cheese on hand for squash and quinoa pie and Italian dinners. So...I tweaked the recipe to make it easy for everyday kitchens to enjoy this exquisite salad. BELIEVE ME. It is divine!
A Remix on Martha's Roasted Corn, Cheese, Basil and Grilled-Tomato Vinaigrette
- 2 heads romaine lettuce, leaves rinsed and dried, and torn into 1 inch pieces
- 3 tomatoes
- 6 tablespoons red wine vinegar
- 3 tablespoons olive oil, plus extra for drizzling on raw tomatoes and corn
- 2 large cloves garlic, minced
- 2 cups frozen whole kernel corn
- 1 cup basil leaves
- 1 1/2 cups shredded parmesan
- Start with your favorite tomatoes. Mine are these lovelies from the potager...
Cut out the core, cut in half, and coat with olive oil, salt and pepper...
Place the frozen corn in a single layer on the foil, drizzle with olive oil, and wrap foil to enclose packet. Place on grill...
Grill tomatoes face down on heated grill for approximately 10 minutes, or until the tomatoes are almost falling apart...
Remove skin of grilled tomatoes, and smash tomato flesh with a wisk...
Add red wine vinegar, olive oil, and salt and pepper to taste (you may not need all of the vinaigrette, depending on how much salad you have)...
Assemble your salad by combining lettuce...
...roasted corn...
...torn basil...
...shredded parmesan...
...and grilled-tomato vinaigrette, and you're all done!
So simple, and just as satisfying! Enjoy!
